Description
This is the 12 year old expression of Kesselherz Louis Santo Single Rum, a Dominican rum made from fresh sugar-cane juice and finished in sherry casks after ex-bourbon ageing, bottled at 40% by the German independent Kesselherz. The sherry influence, including a Pedro Ximenez touch, shapes much of its character.
The wine cask is the headline. The nose carries sherry, sweetness, raisin and spice, the palate turns sherried with cocoa, spice and brown sugar, and the finish settles into burnt sugar, barrel, spice and toasted notes. The sherry comes through clearly, giving a soft, rounded, dried-fruit-led profile over the cane-juice base. At 40% it drinks easy and lightly sweet, a sherried sipper for drinkers who enjoy wine-cask richness more than raw cane character.
