Description
Karuizawa distillery sat below the active Mt. Asama volcano in Nagano Prefecture, producing single malt under Mercian from 1956 until its closure in 2000. Demolished in 2016, the distillery exists today only through its remaining casks. This single cask from 1981, aged to 35 years and released in 2016 for the Taiwanese market, represents the later wave of 1981 vintage bottlings as the supply from that year has continued to diminish.
Maturation was in Oloroso sherry wood, the type responsible for Karuizawa's most celebrated character. Across 35 years the cask would have drawn deep colour and concentrated dark fruit from the seasoned Spanish oak, alongside the leather, bitter chocolate and warm baking spice the distillery became known for. Karuizawa's foundation in Golden Promise barley added a richness of base spirit that stood up to decades in heavy sherry wood. Bottled at 54.4% from a single cask.
