Description
Karuizawa, the single malt distillery in Nagano Prefecture operated by Mercian, distilled from 1956 until its closure in 2000 and was demolished in 2016. Cask number 3555, a 1981 vintage, was selected by The Whisky Exchange after 31 years of maturation and bottled in 2013 for the UK market, one of several Karuizawa single casks allocated to specialist retailers as the supply from this era has been steadily bottled out.
The maturation vessel was an Oloroso sherry cask, and at 31 years the spirit would have spent substantial time integrating with the seasoned Spanish wood in the cool conditions of Nagano's mountain environment. Karuizawa's reliance on sherry oak, combined with its Golden Promise barley base and small pot stills, produced a dark, concentrated house character of stewed fruit, leather, chocolate and warm baking spice. No specific flavour notes are recorded for this cask. Bottled at 60.6% cask strength.
