Karuizawa single malt distillery in Nagano Prefecture operated from 1956 until closure in 2000, and the Oloroso sherry butt matured casks from its surviving stock vary in character from one barrel to the next despite following the same house wood programme. This 1981 vintage was matured for 30 years in an Oloroso sherry butt and released to the global market in 2011.
The cooked vegetable note recorded in the profile adds a savoury dimension to the expected dark fruit and leather of Karuizawa's sherry-driven character, a reminder that individual casks from the same site can diverge interestingly from the house archetype.
