Kamara farms on the slopes of Mygdonia near Thessaloniki in northern Greece, and Stalisma White is a natural white aged on its lees, made from the native varieties Malagousia and Xinomavro. Malagousia is a highly aromatic grape and the main component, while Xinomavro, usually vinified as a red, is pressed and made as a white here, adding structure and acidity. The estate is farmed organically at a cool altitude, which preserves aromatics and freshness. Lees ageing adds a soft, rounder texture while the yeast contact builds a savoury depth over the fruit. The colour is pale straw. The nose is aromatic and floral, with peach, apricot and citrus lifted by white flowers and green, herbal notes. The palate is dry and textured, with stone fruit and a light saline grip carried by fresh acidity into a clean finish. The white vinification of Xinomavro gives the wine more shape and length than a straight aromatic white. Serve it at 9 to 11 degrees in a white wine glass.
