Description
Kamara is a biodynamic estate in northern Greece, and this is a Retsina, the traditional Greek white flavoured with small pieces of pine resin added during fermentation. The blend is Assyrtiko and Roditis, and the wine spent two months on its lees in stainless steel. Retsina has ancient roots, with resin first used to seal amphorae and preserve the wine, and it remains a fixture in Greek bars today. The natural, low-intervention approach keeps the fruit and resin clean and precise. Assyrtiko brings firm acidity and a saline, citrus core, while Roditis adds softer stone fruit, and the resin lays a pine and herbal note over the top. Lees ageing in steel gives a little weight without dulling the freshness. The colour is pale straw. The nose leads with pine, lemon and green apple, backed by dried herbs and a savoury, mineral edge. The palate is dry, crisp and saline, with citrus fruit and a distinctive resinous lift running into a clean finish. Serve it well chilled at 8 to 10 degrees in a white wine glass.
