Description
The Kioutsoukis family run Kamara in northern Greece, near Thessaloniki, farming eleven hectares of vines on permaculture principles with native yeasts and no additions. This wine is a Retsina, the traditional Greek style in which a small amount of Aleppo pine resin is added during fermentation, here made from organic Assyrtiko, the saline, high-acid Greek white. Worked as an orange wine with skin contact, the must takes colour, light tannin and texture from the grape skins, while the touch of pine resin contributes the herbal, faintly balsamic lift that defines Retsina. The combination of a naturally high-acid grape, a young, fresh release and minimal cellar handling keeps the wine bright and zesty rather than heavy. The wine is pale amber. The nose is fresh and savoury, with lemon and citrus peel over dried herbs, white flowers and a clear pine and eucalyptus note. The palate is dry, light and saline, the skin contact giving gentle grip while crisp acidity and a green apple edge carry a clean finish. Serve well chilled at 8 to 10 degrees.
