K5 is a Txakoli from Getariako Txakolina, made by five friends including chef Karlos Arguiñano from Hondarrabi Zuri on granite soils above the Cantabrian Sea. Ten months in tank give a fuller, dry white with green apple, citrus, sea salt and a crisp, saline finish.
Description
The K5 winery sits in Aia, Gipuzkoa, on granite soils overlooking the Cantabrian Sea, and was founded by five friends including the Basque chef Karlos Arguiñano. The single native grape is Hondarrabi Zuri, the mainstay of Getariako Txakolina, grown in a cool, wet, maritime climate that keeps acidity high and alcohol modest. Sea breezes and Atlantic rainfall define the vineyard, while the granite subsoil lends a firm mineral edge. The wine is fermented in stainless steel and then aged ten months in the same tanks on its lees, which gives it more volume and texture than a standard young Txakoli while preserving its freshness and lightly saline character. It shows pale lemon with green tints, a nose of green apple, grapefruit, white flowers and a distinct sea salt note. The palate is dry, crisp and lightly saline, with citrus and orchard fruit and a clean, refreshing finish. The extra lees time makes this a rounder Txakoli suited to the table. Serve well chilled at 8 to 9 degrees. Ideal with anchovies, grilled fish and shellfish.
