Description
Clos des Vignes du Mayne lies in AOC Mâcon-Villages in southern Burgundy, on land the Guillot family acquired in 1952 that had been cultivated by Benedictine monks since 910 and never treated with chemicals. Julien Guillot farms the vineyards organically and biodynamically and works with minimal intervention in the cellar. This white is mostly Chardonnay with a portion of Pinot Gris, grown on the limestone soils that give Mâconnais whites their freshness and chalky grip. The wine is barrel aged for twelve months. With native yeast fermentation and long lees contact, the spent yeast releases mannoproteins that broaden the texture, while slow oxygen exchange through the wood and a natural malolactic fermentation soften the acidity and add a nutty, waxy depth in keeping with the low-sulphur, natural approach. The colour is bright gold, sometimes with a faint haze from being unfiltered. The nose shows pear, lemon, white flowers and hazelnut over honey and beeswax. The palate is dry and textured, with fresh acidity, a savoury mid-palate and a long, mineral finish. Serve at 11 to 12 degrees.
