Description
Domaine Joseph Voillot is a respected estate in Volnay, and this Bourgogne Pinot Noir is its regional red, made to a higher standard than the appellation might suggest. The grapes come from old vines, between 45 and 70 years of age, growing in deep soils of marl and limestone. Older vines root deeply and crop modestly, giving concentrated, well-balanced fruit, while the marl and limestone lend structure and a mineral line. Burgundy's cool continental climate, with its wide day-to-night temperature swing, preserves acidity and lifts the aromatics that define fine Pinot Noir. The wine is made using traditional vinification and then aged in oak barrels for sixteen to eighteen months, depending on the vintage, which adds structure and a light spice through slow oxygen exchange while keeping the fruit in focus. The colour is an elegant, medium ruby. On the nose it shows ripe forest fruits, red cherry, delicate flowers and a subtle spice, with an earthy Burgundian undertone. The palate is medium bodied and fluid, the tannins fine, the acidity fresh, carrying a savoury, gently spiced finish. Serve at 16 degrees in a Burgundy glass. It suits roast duck, poultry and mushroom dishes.
