Joseph Faiveley Chardonnay is a regional white made by Domaine Faiveley under the AOC Bourgogne in Burgundy. The fruit comes from several vineyards spread across the region on limestone loam soils, the classic base for Chardonnay in Burgundy. Limestone drains well and keeps the roots cool, which holds acidity and gives the fresh, mineral backbone that defines the style, while the cool continental climate leads to a measured, even ripening. The wine is aged for eight to ten months on its fine lees, part of it in French oak barrels, in the estate's historic Nuits-Saint-Georges cellar, which offers steady cool conditions for maturation. Lees contact releases mannoproteins that broaden the palate and add a bready, nutty depth, while the fraction in barrel brings a light spice and a slow oxygen exchange that rounds the texture without dominating the fruit. It pours pale gold. The nose shows green apple, pear and lemon over white flowers, with a hazelnut and fresh dough note from the lees and oak. The palate is medium bodied and creamy in texture, the orchard fruit balanced by fresh acidity to a nutty, gently oaked finish. Serve at 11 to 12 degrees.
