Description
José Pariente is a reference winery in Castilla y León, best known for its Verdejo, now run by the third generation of the family. This rosé, named for Victoria Pariente, is made organically from Garnacha and Tempranillo with a portion of the aromatic white Viognier. The wine spends four months on its lees, the spent yeast cells left after fermentation. Lees ageing releases mannoproteins that add body, texture and a subtle savoury, bready depth, rounding out a wine that would otherwise be lean and giving it more presence on the palate. The white Viognier lifts the aromatics with stone fruit and floral notes. The grapes are pressed gently and fermented cool in stainless steel, keeping the colour pale and the fruit fresh, with no oak. The colour is pale pink. The nose shows red berries and white peach with a citrus and floral lift and a hint of apricot from the Viognier. The palate is fresh but textured, the red fruit framed by bright acidity and rounded by the lees work, finishing clean and savoury. Serve well chilled at 8 to 10 degrees.
