Description
José Pariente makes this Sauvignon Blanc in Rueda, a region better known for Verdejo, from some of the first Sauvignon Blanc vines planted here more than thirty years ago. The grapes grow on rocky ground poor in organic matter and low in magnesium and calcium, with limestone beneath; these lean, well-drained soils keep yields modest and concentrate the aromatics, while Rueda's high-plateau climate of hot days and cold nights preserves the grape's natural acidity. Fermentation is in stainless steel, followed by five months on the fine lees in tank; the lees contact adds a light texture and savoury depth through released mannoproteins while the steel keeps the fruit sharp and the profile clean. It pours pale with green glints and shows lemon, citrus peel and green apple with elderflower, white flowers and a saline mineral note. The palate is dry, bright and taut, the acidity carrying a fresh, faintly herbal finish. Serve well chilled at 8 to 10 degrees in a standard white glass. A good aperitif that pairs with shellfish, white fish and fresh goat cheese.
