Description
Cobblers Hill is a limited bottling from the Jordan estate in Stellenbosch, South Africa's leading wine district within the Coastal Region. It is a Bordeaux blend of Merlot and Cabernet Sauvignon, the classic pairing that joins Cabernet's structure and cassis fruit with Merlot's plush, dark-plum flesh. Stellenbosch benefits from cooling sea breezes off the Atlantic and False Bay, which temper the warm Cape sun and let both varieties ripen evenly while retaining acidity. Slopes of decomposed granite and sandstone give the wines firm structure and depth. The fruit is farmed sustainably. The wine is aged 24 months in French oak barrels, a long maturation in which steady oxygen exchange settles the tannin from both grapes and layers in cedar, spice and a fine vanilla and cocoa tone. Expect a dense, dark red with a nose of blackcurrant, plum and redcurrant over cedar, dried herbs and spicy oak. The palate is full and firmly structured, with ripe tannin, fresh acidity and a long, savoury finish. This is a wine with real ageing potential. Serve at 17 to 18 degrees and decant for an hour. It is made for rich roast meats.
