Water comes from springs on Mannoch Hill, near Knockando One of Speyside’s famous women built distilleries. Most of its make goes into Johnnie Walker, a little into single malt. A characterful blend.

    Johnnie Walker 18 Years Old Ultimate 18 (John Walker & Sons) is a blended Scotch from John Walker and Sons, with Cardhu at its heart. Cardhu has been the heart malt of Johnnie Walker since the Cummings sold the distillery to the Walkers in 1893. It runs three wash and three spirit stills, all of a pear shape.

    Cardhu's smooth, sweet malt is the kind that built Johnnie Walker. A bourbon barrel held it, lending vanilla and a little cream. Maturation in the gentle Speyside climate keeps the spirit smooth and honeyed. It sits among the gentle hills above the River Spey near Archiestown. Its soft, sweet make was built for easy drinking and for the heart of a blend. Refill oak lets the light, honeyed Cardhu character lead the way. A gentle maturation suits the soft make, the fruit growing richer with time. Years in oak round the spirit, the apple and pear deepening to honey.

    At 40% it is gentle, sweet and fruity. Soft orchard fruit, honey and a gentle spice run through it, smooth and approachable. A dried fruit and a soft oak give it depth. The finish is rounded, honeyed and gentle. A characterful blended Scotch.
