Description
Johannes Zillinger works his Lower Austria estate as a living system, where sheep, poultry, herbs and trees share the land, farmed biodynamically for over forty years. Revolution White blends Chardonnay, Riesling and Scheurebe grown on this ground. The wine is raised in wood and built through a solera, a fractional system in which older wine is blended with younger across successive years, so each bottling carries the depth of several vintages. That ageing brings a controlled, gentle oxidation and long contact with wood and lees, which build a creamy, enveloping texture and a nutty, savoury complexity while keeping the fruit intact. The colour is deep yellow. The nose is layered, leading on lilac and white flowers, nutmeg and spice, with juicy yellow apple and peach. The palate is creamy and broad, the ripe orchard fruit set against a firm acidity and a savoury, slightly oxidative depth that runs long. Serve at 11 to 13 degrees in a white wine glass, and give it air.
