Description
Jean Fery & Fils farms organically in Burgundy, and Sous la Cabotte is their village-level Savigny-les-Beaune, a Pinot Noir from the Côte de Beaune. Savigny sits on the slopes north-west of Beaune, where limestone and marl soils and a cool continental climate give Pinot Noir its characteristic combination of bright red fruit, fine tannin and freshness rather than weight. Organic farming and the cool 2023 conditions are reflected in a wine that is light and fluid in style. Pinot Noir is handled gently here to preserve aroma and lift, the colour staying pale and bright. The nose shows red cherry, red currant and wild strawberry with a floral, rose-petal note and an earthy undertone typical of the appellation. The palate is delicate and fresh, with silky tannins, crisp acidity and a savoury, mineral finish that reflects the limestone soils. This is classic Burgundy made for the table rather than long cellaring. Serve at 15 to 16 degrees in a wide glass. Its freshness and red fruit make it a natural with roast poultry, duck and mushroom dishes.
