Jean Boyer Diamond Rum Bullion 2007 is a single cask Demerara from the Diamond distillery, distilled on the metal Savalle column that gives the lightest and cleanest of the Guyanese profiles. Bottled by the French house Jean Boyer for its Rum Bullion line, it sits at the approachable end of the spectrum, more about tropical fruit than the heavy timber and anise of the wooden pot stills.

Matured in ex-bourbon wood and presented at 46%, the rum spent fifteen years developing its fruit. The nose is fruity and woody with ripe mango and a dusting of allspice, while the palate carries that mango through alongside papaya and a sweet, soft oak. There is a gentle natural sweetness here that suits the fruit-forward style, with the cask adding spice rather than heavy tannin. It is an unfussy, fruit-led Demerara that shows the friendlier face of the Savalle column.
