Description
Javier Revert is the personal project of Javi Revert, an oenologist who has worked with Celler del Roure since 2009 and began recovering an old family vineyard in 2014 at the highest point of Font de la Figuera. The site sits within the Valencia region, on the border with the harsh continental climate of La Mancha, so it combines Mediterranean warmth with cold winters and cool nights that keep the wines fresh. Simeta is an organic red built around Arcos, a rare local variety, grown on high ground where altitude lengthens ripening and holds acidity. The wine is aged eight months in clay amphora, vessels whose porous walls allow gentle oxygen exchange while their neutral surface adds no oak character, so the fruit and the site remain in focus. It shows a bright medium red, with a nose of red cherry, raspberry and dried Mediterranean herbs over a light mineral edge. The palate combines freshness and depth, with a precise structure and refined, slightly earthy tannins carrying a savoury, stony finish. Serve at 15 to 16 degrees. It suits roast chicken, pork and vegetable dishes.
