Coca i Fitó make this Terra Alta white from Garnacha Blanca and Macabeo, the region’s signature pairing. Three months on its lees in stainless steel gives it flesh, and it shows white peach, pear and a saline citrus edge.

Description
Jaspi Blanc comes from Terra Alta in southern Catalonia, where brothers Toni and Miquel Coca founded Coca i Fitó in 2006. Garnacha Blanca is the anchor here, blended with Macabeo, both grown across the region's stony limestone soils under a warm inland climate cooled by the Cerç wind that keeps the fruit fresh and the acidity intact. The wine is fermented in stainless steel to preserve primary aromatics, then held three months on its fine lees in tank. That lees contact releases mannoproteins that thicken the texture and round the mid palate without any oak, giving a white that stays crisp but gains weight. The colour is pale straw with a green tint. The nose leads with white peach, pear and orchard blossom, backed by a bitter almond note typical of Garnacha Blanca. The palate is dry and fresh, with green apple and citrus peel carried on bright acidity and a faintly saline finish. Serve at 9 to 10 degrees in a standard white glass.
