Jack-Crap Spirits Honest Dominican Rum is a single origin release from the Dominican Republic, distilled on a column still from molasses and given twelve years in ex-bourbon oak before bottling at a well-judged 45%. The strength is the point as much as anything, full enough to carry the flavour without thinning out, while staying eminently drinkable.

This is the soft, dessert-leaning Dominican style done well. The nose is rich and sweet, fudge and nougat over a gentle base, and the palate keeps that confectionery character with nougat, fudge and a mild, barrel-rounded body. The finish is the highlight, nougat and orange peel meeting cappuccino and vanilla, milk chocolate and cocoa shavings rounding it off. It is an easy, gourmet sipper that delivers a lot of approachable flavour for a fair price, the kind of relaxed Dominican rum that suits an after-dinner glass without demanding much from the drinker.
