Description
Jaboulet Secret de Famille is a Syrah from Domaine Paul Jaboulet Ainé, the long-established house at Tain l'Hermitage on the northern Rhône. The wine draws on the granitic soils of the valley's left bank, where decomposed granite drains fast and retains warmth, ripening Syrah fully while the continental climate and cool nights hold acidity and lift the grape's peppery aromatics. Farming here is biodynamic, with the family working the land to keep the fruit expressive. Vinification follows the regional pattern for Syrah: fermentation on the skins extracts colour and tannin, and ageing rounds the structure so the tannins read as silky rather than firm. Bottled as Vin de France, it is built for drinking rather than long cellaring. The colour is deep purple. The nose is fruity, led by cherry and blackberry with black pepper, smoke and dried herbs. The palate is balanced and intense, the fruit carried by fine tannins into a spiced, savoury finish marked by liquorice and a touch of leather. Serve at 16 to 18C, decanting briefly if young. It suits grilled and roast red meats, peppered steak and slow-cooked lamb.
