Description
Domaine Paul Jaboulet Ainé is a historic northern Rhône house, and this white comes from the Crozes-Hermitage appellation, where the region's white wines have grown in reputation over recent decades. It is a biodynamically farmed blend of Marsanne, which gives body and stone fruit, and Roussanne, which adds perfume and freshness. Crozes-Hermitage sits on a mix of granite, clay and alluvial terraces, and the continental climate with its warm days ripens the fruit while cooler conditions keep acidity in place. The wine is aged for around twelve months in concrete tanks, a neutral material that lets the wine settle and gain texture without adding any oak flavour, keeping the fruit clean and precise. It pours a bright gold, with a rich, layered nose of pear, citrus and white peach mingling with honey and beeswax. The palate is full and rounded, its ripe stone fruit and gentle waxy weight held in balance by fresh acidity into a long finish. Serve it at around 10 to 12 degrees in a broad glass.

A rounded white for roast chicken and grilled oily fish such as salmon or monkfish. The stone fruit and waxy texture also suit white fish in a cream sauce and roasted root vegetables.
