Description
Domaine Jean-Jacques Confuron is a respected estate in the Côte de Nuits, in Burgundy's Côte-d'Or, making this village Nuits-Saint-Georges from the Les Fleurières lieu-dit. Pinot Noir here grows on limestone and clay soils over a well-drained slope, poor ground that gives low yields and the fine perfume and acidity that mark red Burgundy, while the cool continental climate holds freshness. On arrival the grapes are fully destemmed and given a cold maceration in cement tanks to draw colour and aroma before fermentation, which runs at controlled temperature with the carbon dioxide kept in to protect the fruit character. The wine is then aged in oak barrels, where slow oxygen exchange softens the tannin and adds a light spice and savoury depth without covering the fruit. The colour is a bright garnet. The nose shows red cherry and wild berries over dried rose, earth and a touch of oak. The palate is medium bodied and elegant, with high acidity, fine silky tannin, a peppery savoury thread and a long, earthy, lightly leathery finish. Serve at 15 to 16 degrees. It suits roast duck, game birds and mushroom dishes.
