J. Bally V.O

J. Bally is a classic Martinique agricole name, and this V.O is from its permanent range, a three year old vieux distilled from fresh-pressed sugarcane juice on a creole column and matured in ex-bourbon oak under the unsweetened island tradition, qualifying for the AOC Vieux tier at three years.

Tropical ageing pushes maturity along quickly, so this young vieux already shows clear oak. The nose is light, dry and agricultural, with woody oak, vanilla, dried fruit and figs over floral, vegetal cane, the palate adds candied fruit, and the finish carries dried fruit, wood, sugarcane and spice. At 45% it stays balanced and dry rather than sweet, a well-made, food-friendly young agricole and a dependable everyday vieux.
