J. Bally Rhum Ambre is a lightly aged agricole from the J. Bally name in Martinique, made from fresh sugarcane juice on a column still. At two years old it sits in the rested, ambre territory rather than full vieux, and it is bottled unsweetened at 45%. The result keeps much of a blanc's grassy energy while picking up a touch of early oak.
Distilled in the creole style to preserve cane character, it shows a vegetal, floral and lightly sweet nose, then a palate of fresh sugarcane, grass and spice that finishes floral, peppery and faintly woody from young oak.
