J. Bally Pyramide 12 Ans is an aged Martinique agricole, made from fresh pressed sugar cane juice under the island's AOC, the only rum appellation in the world, which forbids added sugar. At twelve years it sits at the XO end of the age ladder, well above the appellation's minimums, and that long tropical maturation in ex-bourbon oak shapes its character.

This is the dry, spice forward side of agricole. The grassy, vegetal core of the cane is still there but folded into tobacco, leather, vanilla and dark chocolate, with a woody, dry finish carrying vegetal and spice notes. At 45% the alcohol is well integrated and the wood is handled rather than overpowering, giving a complex, layered pour. A serious, cigar friendly agricole for drinkers who like dry Martinique rum and want more age and oak depth without losing the fresh cane signature underneath.
