Description
J. Bally is a historic Martinique agricole name, celebrated for its pyramid-bottle vintages, now produced within the wider GBH stable. This 1989 millesime is a long-aged expression made from fresh-pressed sugarcane juice rather than molasses, carrying the maturity that tropical and extended ageing bring to old agricole.
Distilled through a column still in the house style and matured in oak, the years show in an earthy, sweet nose of barrel and caramel, a palate of barrel wood, biscuit and ripe fruit, and a spiced, port-tinged finish. The cane core sits under layers of raisin, floral and light cinnamon that come from time in wood. There is no added sugar under AOC rules, so the sweetness reads as cask-derived rather than dosed. At 45% it is a composed, contemplative agricole for slow neat drinking rather than mixing.
