A dry, high proof fifteen year Martinique AOC agricole from J. Bally, distilled from fresh cane juice and aged in ex-bourbon oak, with massive wood spice, dried currants, cherry and tannins, single cask and unsweetened at 62%.
Description
J. Bally is a historic Martinique house, and this Brut de Fut is a 2009 single cask finished in casks from the Kirsch whisky operation, a fifteen year agricole made from fresh pressed sugar cane juice under the island's AOC. Bottled unsweetened at a formidable 62%, it is built for drinkers who want intensity and depth.
Fifteen years of tropical ageing and a high proof combine into a dry, deeply woody rum, with old oak and sandalwood spice leading on the nose, dried red fruits, currants and cherry filling the palate, and a spicy, tannic finish with a light acidic bite. There is rich brown caramel beneath the wood, but this stays firmly dry and powerful rather than sweet, the grassy cane base now well embedded in the maturity. At 62% it rewards patience and a small pour, a robust, tannin led agricole for experienced palates who enjoy cask strength Bally at full volume.
