Bodegas Itsasmendi make this Txakoli in the D.O. Bizkaiko Txakolina, from a blend of the native Hondarrabi Zuri and Hondarrabi Zuri Zerratie grown across small plots in the Urdaibai Biosphere Reserve in the Basque province of Bizkaia. The soils here are diverse, taking in limestone, marl and calcareous rock, and that spread of soils is what gives Txakoli its typical cut and freshness. The climate is Atlantic, cool and wet with strong sea influence, which keeps yields modest and locks in the very high natural acidity that defines the style. The wine is made young and fresh, with no oak, so the grape and the maritime site come through cleanly, sometimes with a faint natural spritz. The colour is pale with green tints. The nose is bright and coastal, with lemon, green apple and pear over white flowers and a saline note. The palate is light, dry and taut, briny and mineral, with a crisp, high-acid finish. This is a wine to drink young and well chilled. Serve at 8 to 10 degrees.
