Description
Time is one of Isle of Jura's older travel releases, a 21 year old that leans into the distillery's occasional smoky character. Jura mostly makes a light, unpeated malt, but peated runs from the late 1990s give bottlings like this a smoky thread. The distillery is the lone producer on its remote Hebridean island.
Rebuilt in 1963 with tall stills for a clean spirit, Jura runs the odd peated batch against its unpeated norm. Matured in ex-Bourbon oak over twenty-one years, the wood carries both the honeyed malt and the gentle smoke.
Bottled at 47.2%. The ex-Bourbon wood gives vanilla and a toffee sweetness, while light peat phenols add smoke. The recorded notes run to chocolate, dried hay, malt sweetness, an oily texture, seasoned oak and smoke. An older, smoky-edged Jura.
