    The Isle of Harris Distillery sits on the edge of the Outer Hebrides, and its gin is built to capture that coastline. The signature move is sugar kelp, a brown seaweed hand-cut from the waters around the island and distilled into the spirit, where it adds a maritime depth you rarely meet in gin. It joins more familiar botanicals like juniper, citrus and coriander, giving a result that is balanced and complex but unmistakably of its place.

    The nose offers fresh citrus and spicy juniper with a clear hint of salt and sea. The palate is elegant, fresh citrus and a subtle herbal sweetness leading into that gentle saline depth from the kelp. It finishes long and clean, a touch of salt lingering with lemon peel and pepper. Make it a G&T with a premium tonic and a sprig of rosemary, or serve it alongside olives and smoked fish.
