Description
A Caol Ila drawn by the bottler North Star Spirits, distilled in 2013, bottled at 50%, one of 1400 bottles. Caol Ila is the lighter, more elegant face of Islay smoke. Tall stills and a clean cut give the spirit its oily, lemony lightness.
It was worked from peated barley through the distillery's tall stills, giving a clean, lemony peat. An unusual cask gave the spirit a distinctive, fruity twist. At this great, fragile age oxidation has the last word, ethereal esters, beeswax and old polished tannins where the smoke once was. Active wood frames the smoke without smothering the citrus beneath. Years in oak round the smoke, the peat mellowing while the brine stays. A clean smoke and a coastal salt define the distillery style. Smoked citrus and a saline minerality are the hallmarks of the make. Its peated character is built on malt smoked to a medium level of phenols.
Undiluted at 50%, it is powerful. A bonfire smoke with lemon and sea salt, with plum and red berry from the cask. The texture is oily, the smoke threaded with citrus. A long maritime smoke closes it. This is a maritime, lemony Islay single malt.
