Iria Otero makes this Ribeiro white in Galicia from Treixadura and Torrontés grown on the region’s terraced hills. Fermented in stainless steel and rested seven months on its lees, it shows lemon, green apple and a saline, floral lift.
Description
Iria Otero farms in D.O. Ribeiro, in Atlantic Galicia, where Treixadura leads and Torrontés adds perfume. The vineyards sit on terraced hillsides worked by hand, and the maritime climate with cool nights preserves the natural acidity that defines wines from this valley. Fermentation is carried out in stainless steel to keep the fruit clean and precise, after which the wine spends seven months on its fine lees. That lees contact releases mannoproteins that broaden the texture and add a subtle savoury depth without masking the varietal character. The result is pale straw with green flecks. The nose is fresh and floral, with lemon, green apple, pear and white flowers over a chamomile note. The palate is bright and taut, the acidity firm and the finish clean and saline, with a mineral edge that reflects the granite soils of the region. Serve it at 8 to 10 degrees in a standard white wine glass. It suits raw and grilled shellfish, white fish and fresh salads, and the texture from the lees also carries fresh goat cheese well.
