Infinity Spirits La Cabana The Royal Cane Cask Company 2007 is a 15 year single cask from El Salvador's La Cabana, a column-still molasses rum drawn from a 2007 vintage and bottled at 51%. It comes via Infinity Spirits' Royal Cane Cask line, and offers a rare chance to put a Salvadoran rum in the glass, a cleaner, gentler counterpoint to the region's funkier neighbours.
Matured in ex-bourbon oak, the column distillate stays smooth and chocolatey, with cocoa, vanilla, coconut and light dried fruit framed by a faint smoky, nutty edge. The 51% strength gives it a touch more grip than the standard 40 percenters without tipping into heat, and a brief whiff of varnish on opening blows off with air. The result is an easygoing, relaxed sipper that favours balance and clarity over power, well suited to a quiet summer evening.
