Infinity Spirits bottled this single cask Foursquare for The Royal Cane Cask Company from the 2002 vintage, a 20 year release at 50% that breaks sharply from the estate's usual signature. Foursquare is the no-additives St Philip distillery run by Richard Seale, blending pot and column still rum, but this cask spent its life in cooler continental conditions rather than the Caribbean.
That slow, gentle European maturation shows: instead of the familiar coconut and vanilla, it offers honeycomb, honey, herbs and incense, with a woody, vanilla-edged nose and a palate of burnt sugar, chocolate and oak, finishing on dried fruit, honey and varnish. Several drinkers compare its honeyed, herbal character to old Rockley-style Barbados rather than typical Foursquare.
