Description
Bodegas Hispano-Suizas makes this varietal Sauvignon Blanc in Utiel-Requena, inland from Valencia. The grapes come from the winery's own old, low-yield vines planted in limestone and clay soils, on a high plateau with a continental climate softened by Mediterranean influence. The wide day-to-night temperature swing at altitude slows ripening and preserves acidity and aromatics, while the limestone lends a firm mineral spine. Fruit is picked by hand in the cool of the morning to keep it fresh on the way to the cellar. The wine is barrel fermented, so fermentation in wood and the lees left in contact afterwards build a rounder, more textured palate than a tank-made Sauvignon, without burying the grape's green character under oak. The colour is bright straw. The nose leads with lemon, elderflower and white peach, backed by a green, herbal lift and citrus peel. The palate is dry and fresh, with taut acidity, a subtle creamy weight from the lees and a clean, mineral finish. Serve at 9 to 11 degrees.
