Description
Hispano-Suizas produce this rosé from Pinot Noir grown in inland Valencia, in eastern Spain. Pinot Noir is an unusual choice this far south, but the producer plants it at altitude where cool nights slow ripening and preserve the bright acidity and delicate aromatics the grape needs. The fruit is gently pressed for a pale, Provence-style colour, then fermented cool in stainless steel and aged on its fine lees. That lees contact releases mannoproteins that round the texture and add a subtle savoury weight while keeping the wine fresh and dry. The colour is pale salmon pink. The nose shows wild strawberry, redcurrant and white peach, lifted by citrus and a floral rose note. On the palate it is dry, fine and crisp, with delicate red fruit, a lemony lift and a clean, saline finish at 14% alcohol, the latter carried lightly thanks to the fresh acidity. This is a wine for early drinking and is at its best young. Serve well chilled at 8 to 10 degrees. It suits shellfish, white fish and lighter poultry dishes.
