Cabernere is the wine the makers of Il Moralizzatore suggest you start with, an unusual blend of Cabernet Sauvignon, Merlot and Pinot Noir from the upper hills above Vicenza in the Veneto. Andrea Dalla Grana and Enrico Friso farm biodynamically in these northern Italian foothills, where morainic and clay-limestone soils drain freely and cool air off the mountains preserves the acidity and aromatic freshness that keep the wine light on its feet. The low alcohol here is the headline: at well under twelve degrees this is a fresh, drinkable red rather than a heavy one, with the Pinot Noir adding lift and red fruit to the darker Bordeaux grapes. The wine is made naturally with native yeasts and given time in steel and barrel, the steel keeping the fruit clean and primary while the barrel rounds the tannin and lends a subtle, savoury frame without heavy oak. Expect a medium ruby colour and a nose of ripe cherry, red berries and plum over black pepper, thyme and a gentle earthiness. The palate is fresh and medium-bodied with fine, soft tannin and a savoury, clean finish. Serve lightly chilled at 15 to 16 degrees in a medium glass. It suits roast chicken, pork and lighter meat dishes.
