Il Caggio makes Ipsus from Sangiovese grown around its medieval village in Chianti Classico. Eighteen months in barrel give a fresh, structured Tuscan red with sour cherry, red berries, herbs and an earthy grip.
Description
Il Caggio is both a hamlet and an estate in Chianti Classico, set among the rolling Sangiovese hills of central Tuscany. Ipsus is its Sangiovese, made in a traditional register that refines old practice rather than replacing it. The galestro and alberese soils of the zone, a mix of friable schist and limestone, drain freely and stress the vines, concentrating the fruit and feeding Sangiovese's natural acidity and firm tannin. The continental climate and elevation give cool nights that hold freshness through the long ripening. The wine is aged eighteen months in barrel, where slow oxygen exchange softens the tannins and adds cedar and tobacco while leaving the bright fruit intact. The colour is a clear ruby. The nose is fresh and defined, with sour cherry, red berries and plum over dried herbs, tobacco, leather and an earthy undertone. The palate is vibrant and structured, the high acidity and savoury tannin giving energy and length, finishing dry and stony. Serve at 16 to 18C, decanted; it is a classic match for tomato-based dishes and roast meats.
