Description
Il Bianco di Marilina Riserva comes from Cantina Marilina, the organic and vegan estate Marilina Paterno set up with her sister Federica in 2001 within the IGT Terre Siciliane in south east Sicily. The grape is Grecanico, a native Sicilian white grown here on limestone rich soils under a hot, dry climate, with coastal breezes and cool nights that hold the acidity and keep the ripe fruit fresh. As a riserva, the wine is aged twelve months in used French oak barrels. Older barrels give slow oxygen exchange and gentle structure with only a light spice rather than strong new oak flavour, while time on the lees and in barrel builds a broader, rounder texture and a savoury, nutty depth. The result is a fuller white with a warm 14 percent alcohol carried in balance. Expect a deep golden colour, a nose of ripe white peach, toasted almond and honey with a waxy note, and a rounded palate closing on a mineral, nutty finish. Serve at 11 to 13 degrees in a larger glass.

Additional information
The weight and oak suit baked white fish, roast chicken and pork in a herb sauce. Its nutty depth also stands up to aged hard cheese. Serve it at cellar temperature in a generous glass to let the fruit open.
