Description
Ikawa is a small craft distillery in Shizuoka Prefecture, one of Japan's newer wave of independent producers, making its own-distillery single malt in the country's central highlands. This release is a four year old drawn from a single bourbon barrel, bottled at cask strength of 58% and destined only for Italy, offering a rare and direct look at a young Shizuoka malt without dilution or blending.
Maturation in a bourbon barrel over four years gives the spirit its backbone of vanilla, toffee and fresh orchard fruit, with the youth of the distillate keeping things lively and grain-forward. At 58% the wood spice and spirit intensity are undiminished, and in the maker's house style the result is an energetic, honest expression of a small-batch Japanese single malt finding its shape at cask strength.
