Aurora is a fresh Etna white from Salvo Foti’s I Vigneri, blending native Carricante and Minella on volcanic soil at altitude. Six months on the lees keep it bright and low in alcohol, with lemon, green apple, white flowers and a stony mineral finish.

Description
I Vigneri, the growers' association led by Salvo Foti, makes Aurora on the slopes of Mount Etna in Sicily. The wine blends Carricante with a little Minella, both native to the volcano, grown on terraced black soils of weathered lava and ash at altitude. The high elevation and wide diurnal temperature range give the fruit bright acidity and a mineral tension, while the volcanic ground lends a saline, stony character. Farming is organic. Vinification is in stainless steel with six months of reductive ageing on the fine lees, a cool maturation that keeps the wine fresh and direct while adding a touch of weight, the sealed tank preserving aromatics and holding oxidation at bay. At 11.5% this is a light, low alcohol white built for freshness. Expect a pale colour, a nose of lemon, green apple, white flowers and a flinty mineral note, and a crisp, saline palate with citrus, orchard fruit and a clean volcanic finish. Serve well chilled at 9 to 11 degrees.
