Description
This single malt was distilled at West Cork Distillers in Skibbereen, Co. Cork, and selected and bottled for John Aylesbury, the long standing German whisky merchant, under the Hyde label. It is a small single cask style release, limited to 399 bottles and offered for a retailer event.
The whiskey matures in ex-bourbon casks before a finish in Pedro Ximenez sherry butts, the sweetest of the sherry styles, which layer raisin, date and a dark, syrupy richness over the malt. Bottled at 46%, it keeps enough strength to balance the PX sweetness, with West Cork's fresh, cereal driven spirit underneath. A bonder style bottling that credits both the Cork distillery and the German house that chose the cask.
