Description
This Parcellaire bottling is HSE's nod to terroir, a single-parcel rum from Canne d'Or cane harvested in 2016, distilled on a creole column from fresh sugar-cane juice and aged three years in ex-bourbon oak. As an AOC Martinique vieux it qualifies for the protected term, and it is bottled unsweetened at 45%.
It sits at the crossroads of young and aged agricole. The nose keeps a fresh, grassy cane core with vegetal notes, light spice and emerging wood; the palate balances vegetal sugarcane against toasted oak and a touch of tropical fruit; the finish runs dry and herbal with peppery spice, caramel and candied fruit. The young barrel adds structure without burying the cane, so the parcel character still reads through. It is approachable at 45% yet clearly drier and more spice-led than sweet aged molasses rum, a sound, characterful step into aged Martinique agricole.
