Description
Honoro Vera Monastrell comes from Bodegas Juan Gil in Jumilla, the warm Murcian region where Monastrell is the dominant variety. The grapes grow on nutrient-poor soils of limestone studded with rocks, conditions that limit vigour and force the vines to concentrate their energy into a small crop of intensely flavoured fruit. The hot, dry continental climate ripens Monastrell fully, giving deep colour and ripe fruit, while the stony ground and cooler nights keep the wine fresh rather than heavy. Fermentation runs for fifteen days at a controlled temperature below 25 degrees to extract colour and aromatic fruit without harsh tannin, and the wine is then chilled and held until bottling. It sees no oak, so the focus stays on the grape. In the glass it is dense and youthful, with juicy red and black fruit on the nose, a whisper of violet and a cooling mentholated, herbal note typical of the variety. The palate is full and fruit-forward, with soft tannins and a fresh, savoury finish. Organic and suitable for vegans. Serve at 15 to 17 degrees with grilled meats and spiced dishes.
