Holyrood Distillery Sherry Cask Edition comes from Holyrood, an Edinburgh distillery better known for whisky and gin that has branched into rum. This release is matured in sherry casks, a nod to the distillery's Scottish maturation traditions.

Bottled unsweetened at 42.5%, it represents the growing wave of craft rum made outside the Caribbean. Expect the dried fruit, nutty and lightly spiced character that sherry wood typically lends, layered over a cleaner European distilled rum base. It drinks drier and more whisky adjacent than a sweet tropical rum, an interesting expression of new-world rum making.
