Holyrood is a young Edinburgh distillery making both whisky and gin, and Height of Arrows shows its disciplined, whisky-trained instincts. Rather than reach for a long roll-call of botanicals, the team builds the gin from a handful of decisive elements: classic juniper, sea salt and a fine lemon zest. The result is a clear, structured spirit, more about precision and intensity than opulence, and it has earned the distillery a following on the international bar scene.
The nose leads with dominant juniper, fresh citrus and a fine salty nuance; the palate is clean and powerful, lemon-bright with a real mineral depth running underneath. The finish is dry, refreshing and long. It makes a textbook gin and tonic with a dry tonic and a twist of lemon, and stands up beautifully to a Martini, but it earns its keep most alongside a plate of fresh oysters.
