Description
HMR White is a single-variety Xarel·lo from the D.O. Penedès, made by Heretat MontRubí in the town of Font-Rubí in the north of the appellation. The vineyards sit high, between 520 and 700 metres, set among deep Mediterranean pine forest and wild aromatic scrub, and the altitude with its cool nights holds the acidity and freshness in a warm-climate grape. Xarel·lo is the backbone of Penedès and one of the classic Cava varieties, valued for its structure, its green-fruited character and its ability to hold acidity. Here it is made as a still wine in a fresh, unoaked style, fermented cool to keep the fruit and the herbal, earthy edge the variety takes from these hillside sites. The winery works sustainably, with a respectful, traditional approach to viticulture. It pours pale straw with a green tint and shows green apple, pear and lemon over white flowers, with a subtle herbal note and a stony undertone. The palate is dry and crisp, the mountain fruit giving a firm line of acidity through a clean, faintly saline finish. Serve well chilled at 8 to 10 degrees.
