Description
Hito Rosado comes from Bodegas Cepa 21 in Ribera del Duero, a modern estate working with the region's local strain of Tempranillo, Tinto Fino. The fruit is grown high, between 750 and 850 metres above sea level, on sandy clay loam. Altitude is the defining factor here: warm days ripen the grapes while cold mountain nights slow sugar accumulation and lock in natural acidity, the wide diurnal range that keeps a rosé from this latitude fresh rather than heavy. The sandy soils drain freely and add lift. To make the wine pale and delicate, the grapes are given a long settling and a cold maceration of around 24 hours, drawing out just enough colour and aromatic phenolics from the skins before the juice is run off. Fermentation then runs at controlled low temperature to protect the primary fruit. The result is a pale pink wine with aromas of wild strawberry, red cherry and white peach, framed by citrus peel and a savoury, saline finish that reflects the cool high ground. Serve well chilled at 8 to 10 degrees.
